Two of Our Favorite Passover Recipes- CT Bites
It’s never too late to add a few new Passover recipes to the menu. Here are two more great Passover classics from Marcia Selden Catering including a Nut Free Haroset and a delicious Matzo Kugel.
Nut Free Haroset
2 small pears, cored and coarsely chopped
12 dried apricot halves, chopped (You could use other dried fruit, prunes for example if you can’t find apricots that are kosher for passover)
1/4 cup raisins
1 1/2 tsp honey
1 tsp lemon juice
1/2 tsp cinnamon
2 tablespoons red wine (or grape juice)
Combine everything except the wine or juice in a medium bowl. Once it’s all mixed together, stir in the wine or juice.
Sweet Apple Matzo Kugel
3 Matzos
6 eggs
4 tart apples, shredded
½ c. sugar
1 T. grated orange rind
¼ t cinnamon
¼ c. melted butter
½ c raisins
½ t. salt
½ c. almonds, chopped
2 Tbl. Melted Butter – Additional Matzo Meal – Cinnamon – Sugar mix
Crumble matzo into warm water and soak until soft. Beat eggs well. Add salt. Squeeze the matzo dry and add into the eggs. Add butter, apples, orange rind, cinnamon, sugar, raisins and almonds. Blend. It must be a loose mixture so that it doesn’t dry out when baking. Can add OJ, if needed. Place in a well-buttered casserole. Pour 2 T. melted butter over the top and sprinkle with matzo meal and cinnamon – sugar mix .Bake in a 350 oven – 45 minutes.
