Summertime Watermelon Salad
A Refreshing, No-Cook Salad for Summertime

This is a bright, cool, beautiful salad with fresh flavors that’s easy to throw together and is perfect as a side for your favorite grilled fish or meat. Enjoy!
¼ cup fresh lime juice
1 tbsp minced shallots
1 tbsp honey
3 tbsp olive oil
1 large fennel bulb shaved
3 cups cubed watermelon
1 English cucumber cubed
1 block feta, cut into cubes
1/4 cup chopped fennel fronds
sea salt and freshly ground pepper to taste
To make the dressing, combine the lime juice, shallots, honey & olive oil.
Season with sea salt and fresh ground pepper to taste. Toss in the fennel fronds.
Slice the fennel bulb in half through the core and use a paring knife to remove the core. Using a mandoline, slice the fennel into very thin pieces. Lightly toss with dressing and set aside.
Individually toss the Watermelon, Cucumber & Feta with the dressing. Season each with S&P to taste.
Arrange the cubes on a platter in a checkerboard style on top of the shaved fennel.
