(pronounced “oo-mommy”) While the term may be new to us, it’s not new to the Japanese, who have used it to describe this “savory” or “meaty” taste since the early 1900’s. Its literal translation of the Japanese term means “pleasant, savory taste”, but we like to think of it as the flavor of meat over an open flame, but different from a straight salty taste.
Savory cocktails have been on the rise and Umami has been trending on the food scene. Why not add this savory “fifth taste” to your next cocktail? Pick up some Umami salt to rim your next bacon infused bourbon here.
Bacon Infused Bourbon
- 1 lb. thick cut maple smoked bacon
- 2 Tbs. brown sugar
- 1/3 C. rendered bacon fat
- 3 C. of bourbon
Preheat oven to 425. Lay bacon on a baking sheet and sprinkle with brown sugar, cook until crisp and reserve the rendered fat. Add 1/3 cup of hot fat to a jar and fill with bourbon. Seal and allow to stand until it reaches room temperature. Place the jar in the freezer for 24 hours. The fat will solidify but the bourbon will remain in a liquid state. Open the jar and pour off the bourbon, straining through a coffee filter or cheesecloth to remove any loose fat particles.
Bacon Umami Bourbon Smash
