Sangria Infused Watermelon and Manchego Skewers
As we transition from the end of the school year into summer fun, we finally get the chance to unwind and get serious about our summer “cocktails.” Our recipe for Sangria Infused Watermelon and Manchego Skewers walks the line between appetizer and alcoholic beverage…which makes it the perfect party snack.
Sangria Infused Watermelon and Manchego Skewers
Ingredients:
½ C Pinot Noir
¼ C Fresh Lemon Juice
1/8 C Peach Juice
1 ½ T Sugar
½ T Triple Sec
2 T Brandy
1 T Orange Juice
10 (1/2 inch) Cubes Watermelon
10 (1/4 inch) Cubes Manchego
10 Mini Skewers
1 t Chopped Cilantro
Directions:
Combine the wine, lemon juice, peach juice, sugar, triple sec, brandy, and orange juice. Whisk until the sugar melts.
Place the sangria into a plastic Ziploc bag with the watermelon cubes and close, squeezing all the air out. Refrigerate at least 4 hours, but for best results overnight.
After the watermelon has marinated, skewer with the Manchego. When ready to serve, sprinkle with the cilantro.
