Pancakes Rule! Sweet + Savory Deliciousness Worth Waking Up For

We’ve never met a pancake we didn’t like. They’re a distant relative of the cake family, only they’re perfect for BREAKFAST. They’re light and fluffy, fun to flip, and they are even better when paired with warm maple syrup! You can even make them savory if you prefer, the possibilities are endless. Here are two YUMMY pancake recipes from Marcia Selden Catering & Event Planning that will make every day feel like Sunday!

 

Fabulous + Fluffy Orange Ricotta Pancakes

These are creamy with a custard-like center, perfect with a delicious fresh fruit compote or jam.  We like ours with a spoonful of ricotta and fresh orange zest. #GetInMyBelly!

Ingredients:

3 ½ T Granulated Sugar
2 t Baking Powder
¼ t Baking Soda
½ t Salt
1 C Milk
¾ C Ricotta
3 Large Eggs
½ t Vanilla Extract
1 T Orange Zest
¼ C Fresh Orange Juice
2 T Butter, melted1 ½ C Flour

Directions:

Whisk together flour, sugar, baking powder, baking soda, salt and set aside. In a separate large bowl, whisk together milk, ricotta, eggs and vanilla until well blended. Then, whisk orange zest with orange juice and add to milk mixture along with melted butter and blend until combined. It will curdle a little which is ok. Pour into flour mixture and whisk just till combined (batter should be slightly lumpy).

Pour about 1/3 C batter onto a lightly buttered griddle or frying pan on medium high heat.  Cook until you start to see bubbles on the surface and flip to the other side until golden brown. Serve with your favorite topping or syrup.

Bacon, Cheddar + Scallion Pancakes

Top this savory pancake with a fried egg and you’ll be all set! (Hot sauce optional for some extra kick!)

½ C Shredded Cheddar Cheese
½ C Scallions, finely chopped
5 Strips of Bacon, cooked and crumbled
1 C Flour
2 T Sugar
2 T Baking Powder
¼ t Salt
1 C Milk
2 T Unsalted Butter, melted
1 Egg, beaten

In a large mixing bowl, combine the flour, sugar, baking powder and salt together. Then using a wooden spoon, stir in the milk and melted butter. Do not overmix.  Add the beaten egg + cheddar cheese, scallions and stir.

Scoop about ¼ cup of the batter onto a lightly buttered griddle or frying pan on medium heat. Sprinkle pieces of bacon over the top of each pancake. Cook each pancake until you start to see the bubbles popping on the top then flip over and cook an additional 2-3 minutes.
