Heart Beets Salad for Valentine’s Day

Surprise your Valentine with a special, sweet detail like our yummy heart shaped roasted beet salad. Our adorable salad looks love-ly and is light and delicious. The perfect starter to your romantic V-day meal!

Ingredients:

4 medium Beets
4 T Extra Virgin Olive Oil
Salt and Pepper
2 t fresh Ginger, grated
1 t Jalapeno, finely diced
½  t Garlic, minced
¼ C diced Vidalia onion
¼  C fresh Mint, minced
¼  C fresh Cilantro, minced
¼ C thinly sliced Scallions
2 t fresh Lime Juice
Small heart shaped cookie cutter
2 C Baby Greens
Juice of one lemon
Olive Oil to taste
¼ C Goat Cheese, crumbled
¼ C Pistachios, chopped and toasted

Directions:

Preheat oven to 375 degrees F.

Trim the tops off the beets and drizzle with the olive oil. Season the beets with salt and pepper, wrap them in aluminum foil and roast until tender, about 40-50 minutes.

While the beets are roasting, place the shallot, jalapeno, ginger, garlic, mint, cilantro, lime juice and 6 tablespoons of olive oil in a small bowl and stir to combine. Blend with an immersion blender to combine.

When the beets are ready, remove the foil and allow to cool. Peel the beets by slipping the skins off with your fingers (you may want to use rubber gloves; beets can stain). Slice the beets ½ inch thick and with a small heart-shaped cookie cutter, cut as many hearts out of each slice as you can. Plate the salad ingredients and drizzle with dressing.
